Wax Pâte à tartiner Sosa

Ingredients

400 g AZÉLIA 35% COUVERTURE 260 g Hazelnut paste 200 g Hazelnut oil 8 g SOSA Wax Concept 2 g Fleur de sel 12 g Non-fat dry milk

Heat the hazelnut oil to 60°C (140°F) and dissolve the wax.
Add the AZÉLIA couverture and other ingredients, and mix.
Temper until it starts to set at 25-26°C (75-80°F) and pour into pots.
Store at 16°C (60°F) to maintain stability.
